Box Notes

The Little Gem Lettuce is back! This is a mini version of romaine lettuce. Rinse well in a water bath to remove any soil grit and allow to dry on a towel face down with some patting to remove any remaining water droplets, slice lengthwise to form halves. Place the halves face up in a circle on a plate then drizzle with olive oil and a pomegranate or elderberry vinegar. Add sliced avocadoes a squeeze of lemon juice, salt and pepper. Grate Parmesan cheese over all. This is an incredibly tasty salad that can be a stand-alone meal or a side dish to a scrumptious dinner.
